I believe there is a bug where the chef become idle at some point due to conveyor belt data not fully cleared as day reset. When editing a sushi bar table, plates on its conveyor belt will now transfer to the closest conveyor belt instead of falling to the ground.

I found the cause of the "sushi floating in mid-air" bug. If you were holding a sushi plate and clicked rapidly on another plate on the conveyor belt, the plate in your hand could get stuck in the air and make the game unplayable.My own playtesting never included clicking that quickly, so I never caught it.
